Banana Berry Goat Cheese French Toast

I have a delicious, quick and easy Banana Berry Goat Cheese French Toast, is on the menu for breakfast this lovely morning. If you feel like making you, or your family something a little extra special for breakfast without having to break out all the utensils in your kitchen, this recipe is one you should give a try. The fresh in season flavours from the berries are amazing, mixed in with the  sweetness of the bananas, and the creaminess of the goat cheese, drizzle a little agave nectar or pure maple syrup over top, and you have your self a delicious start to a beautiful morning.

This past week-end we went fishing, and out for ice cream a couple of times, along with a dinner outing in a cute little town near by where they have  great food, and entertainment, perfect for Summer outings in the evening. Along one of  the trips to the ice cream store, we went to the park to eat our ice cream, other wise my son would have had the entire car filled with ice cream, just like his clothes. Total mess he was, but totally worth every little smile from the enjoyment. Any way at this sweet little park we discovered a huge, and I mean huge berry bush, it was so big that you could have been picking them for hours and there would still be plenty left, so we picked a whole bunch of them enough for an extra treat in the morning for breakfast, and mid day snack the next day. Luckily I still had a few left over to enjoy one more treat. I really want to go back there, but I don’t want to be selfish. Maybe if I share them with others I won’t feel so guilty.

I used whole wheat english muffins in this recipe because I love the taste of them, and also because they are a little denser than regular bread, making them a good choice for this goody filled french toast sandwich.

I used goat cheese, but you can also use a light cream cheese or ricotta cheese if you prefer. I think next time I will try ricotta cheese, because it tastes lovely with fresh picked berries.

Banana Berry Goat Cheese French Toast

Serves: 3

  • 3 whole wheat english muffins sliced in half
  • just under ¼ cup of egg whites
  • ½ tsp. pure vanilla
  • 1 tbsp. coconut milk
  • ½ tsp. ground cinnamon
  • ½ cup fresh berries
  • 1 banana sliced
  • 3 tbsp. soft goat cheese, ricotta cheese or light cream cheese
  • Pure maple syrup or organic maple flavoured agave syrup

  1. Slice english muffins in half and set aside
  2. In a bowl whisk egg whites with cinnamon, and vanilla
  3. Heat up a large skillet or flat griddle pan on medium heat sprayed a little with cooking spray.
  4. Dip the slices of english muffin into the egg white mixture let it soak for a minute, then place them on the heated pan, cook for 3-4 minutes pressing down a little to make sure the centre is getting browned as well, flip it over and cook for another 2-3 minutes till nicely toasted.
  5. Remove from heat onto a plate, spread goat cheese on each slice, top one slice with sliced bananas, top with berries then put them together like sandwiches, drizzle a little maple syrup of agave nectar over top and serve right away.
