- INGREDIENTS:
- • 1 bag of buckwheat tortillas or make them fresh using the buckwheat recipe available on this site.
- • 6 large eggs plus 1 egg separate keep the white
- • ½ small red onion chopped
- • 1 red pepper and 1 green pepper chopped
- • 1 package of process and preservative free bacon, cooked, drained and set aside.
- • 3 tbsp. parmesan cheese
- • ¼ tsp. of sea salt and pepper
- • ¼ tsp. smoked cayenne pepper
- • ½ tsp. salt free garlic and herb seasoning
- • 1 cup shredded old cheddar cheese
This is a perfect solution to making your breakfast a head of time the night before and making enough for a few different breakfasts for the week. Simply freeze these gluten free egg roll ups after you make them, and take them out in the morning, and just either pop them in the micro wave or heat them up in the oven while you finish getting ready in the morning for work. I make these for my husband all the time, that way I don’t have to get up too early to make his breakfast, and plus he can do this himself although he says that it tastes better when I do it??? Gee I wonder why haha, I guess some things will never change
METHOD:
- Cook, drain and set aside bacon
- In a large skillet cook onions on medium low heat for about 2 minutes
- Add pepper and sauté for another 3-4 minutes
- In a bowl place 6 eggs and whisk well, add salt, peppers, and garlic seasoning, whisk all together
- Add to skillet and scramble till well cooked for 4-5 minutes
- On a clean work surface place buckwheat tortillas flat and place a small amount of cheese to one side, place two strips of bacon and 2 tbsp. of scrambled egg mixture, roll up and add a little more cheese at the end so it holds the roll together when melted.
- Spray a cookie sheet with pam and place roll ups about an 1 inch apart
- Repeat process till complete
- In a small dish whisk egg white from 1 egg
- With a brush wet the tops of the roll up with the egg white and coat tops with parmesan cheese, if you like a little spice you can shake a little cayenne pepper to the tops as well
- Bake at 400 F for 10-15 minutes till tops are golden brown serve hot.
