Mini Chocolate Avocado Loaves
How often have you wondered how you could manage to eat chocolate and get away with it, and when I say get away with it I mean it in the sence, eat it with out all the guilty feeling like you feel of the healthy wagon. Eating healthy and changing your diet for the better doesn’t have to be torture. In fact from my own personal experience and the experience of people I know, depriving yourself of treats almost always causes the final break and demise of a diet. I don’t follow any one diet in particular, I follow the goodness of food, meaning I eat better, nutritious healthy foods instead of foods that you know are no good for you. For instance instead of eating deep-fried foods I always cook those famous foods by baking or grilling, adding lots of fruit and vegetables, changing bleached and refined foods for whole grain and unrefined foods, these few simple changes make a big difference, and that is what brings me to this delicious mini chocolate avocado loaf that you will be making time and time again, and storing the recipe card in your book, web recipes or that little box of keep forever recipes you have at home
- 1-1/2 cup organic white flour
- 1 cup organic whole wheat flour
- ½ cup cocoa powder unsweetened
- 1 tbsp. baking powder
- ¼ tsp. sea salt
- ½ cup organic unrefined sugar
- ¾ cup mini chocolate chips
- 2 eggs
- ½ cup plain Greek yogurt
- 1 tbsp. vanilla
- 1 cup almond milk
- ⅓ cup unsalted butter or earth balance buttery spread
- 2 avocados peeled, pit removed and mashed
- Pre-heat oven to 375F, spray a 8 mini loaf pan tray with a low-fat non stick baking spray and set aside.
- On a plate peel avocados, remove the pit and mash till smooth, set aside.
- In a bowl combine both flours, baking powder, sea salt, and cocoa powder, whisk to blend and set aside.
- In a separate bowl whisk eggs, add sugar and whisk well, add in melted butter, mashed avocado, almond milk and yogurt mix all ingredients until they are well combined, and in vanilla and give it a final stir.
- Start adding flour mixture to the wet ingredients in small portions blending well after each addition, toss in chocolate chips and blend one last time.
- Pour batter evenly into each loaf tin, making 8 mini loaves.
- Place in the oven on the middle rack and bake for 30-35 minutes or until a tooth pick comes out clean, the tops will slightly crack a little as well.
- Remove from oven and allow to cool for 5 minutes.
- Make a chocolate glaze by mixing ½ cup of bittersweet chocolate chips and 1 tbsp. of milk, place in a microwave safe dish and microwave for 30 seconds, stir well till smooth, place the melted chocolate into a piping bag and drizzle over top of each loaf, allow chocolate to cool completely so it will harden again.
