Mini Turkey Sausage Egg Loafs
I love making these mini turkey sausage egg loafs simply because they are so versatile you can have them for breakfast, a light lunch or even a light dinner. The turkey sausage makes this a healthier choice, and eggs are a great source for vitamin D and a good source of protein and energy.
Mini Turkey Sausage Egg Loafs

Ingredients
- 6 lean turkey sausage links
- 5 large eggs
- 3 large egg whites
- ¼ cup smooth light ricotta
- ¾ cup skim milk
- ¼ cup grated skim milk, reduced fat mozzarella cheese
- ¾ cup finely chopped mushrooms
- ¼ cup chopped red onions
- 1 cup loose spinach
- ¼ tsp. each of sea salt and pepper
- ½ tsp. sweet chili pepper
- ½ tsp. tarragon
- ¼ tsp. dry mustarrd
Instructions
- Pre-heat oven to 325f
- Heat up non stick skillet on medium heat toss in mushrooms and chopped onion cook for 2-3 minutes stirring occasionally.
- Add 6 links of sausage that has been removed from the casing and crumbled cook for 7-8 minutes till nicely browned, stirring frequently and breaking it up.
- Add in spinach cook for another 3 minutes till spinach wilts remove from heat and drain in a strainer set aside for 5 minutes to cool.
- In a bowl whisk together eggs and egg whites, add milk, ricotta, sea salt, pepper, tarragon, dry mustard and sweet chili whisk well.
- Grease a mini loaf pan well with non stick spray.
- Using an ice cream scoop portion egg mixture evenly into mini loaf pan trays.
- Now scoop even portions of meat mixture into each mini loaf pan as well.
- Top each mini loaf pan with shredded mozzarella
- Place in oven uncovered and bake for 30-35 minutes till tops are golden brown, remove from heat and allow to cool for a few minutes, remove and serve hot
- These can be wrapped in plastic wrap when completely cooled and stored in the fridge for 3 days or stored in the freezer for up to 1 month.
