There is no need to knead this bread recipe. Corny to say I know, but I thought it was kinda funny. You know you spend too much time on your own when you make up silly jokes for yourself to laugh at. In all seriousness this loaf is incredibly delicious and you don’t need to spend time letting it rise and kneading it to perfection, it perfects itself with all the fresh wonderful ingredients. Give it a try you will love it.

My first choice of bread would always be fresh homemade any day of the week instead of a store bought bread, but realism sets in when you wake up, turn around, and its dinner time, so making homemade bread is not always an option, but it is with this recipe. The most time consuming part about this recipe is waiting for the loaf to finish baking in the oven. You should find something to do wether its to make lunch, dinner or go outside while its baking because the wonderful aroma that comes with this bread is a tease especially if you are hungry. Just a little FYI.

Ingredients
  • 1-1/2 cups organic white flour
  • 1-1/2 cups organic whole wheat flour
  • 1 tbsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. sea salt
  • 2 tbsp. ground flax seed
  • 2-3 tbsp. parmesan cheese
  • 3 cloves of garlic grated in a fine grater hole
  • 1 green onion chopped
  • 1 tsp. tarragon
  • A small handful of fresh parsley chopped
  • 2 twigs of fresh rosemary chopped
  • 3 tbsp. honey
  • 1-1/2 cups coconut milk
  • ½ cup plain greek yogurt
  • 1 egg
  • ¼ cup extra virgin olive oil
Egg Wash The Top
  • 1 egg
  • 1 tbsp. milk
  • ½ tsp. parmesan cheese
  • ½ tsp. ground flax seed

Instructions
  1. Pre-heat oven to 350F
  2. Grease loaf pan with a non stick cooking spray or use a silicone bread loaf pan
  3. In a bowl combine both flours, baking powder, baking soda, sea salt, tarragon, chopped onion, grated garlic, chopped rosemary and parsley, ground flax seed and parmesan cheese, whisk to combine all the ingredients evenly.
  4. In another bowl pour in coconut milk, greek yogurt and honey whisk well, then add in egg followed by the olive oil and whisk again.
  5. Using a wooden spoon or mixing spoon, pour in flour mixture into the wet ingredients and mix well until a well combined dough forms. It will be sticky but that is ok, you just want all the dry ingredients to be well mixed.
  6. I generally rub a little olive oil into my hands, grab the dough out of the bowl, form it into a loaf, and place into the loaf pan.
  7. In a small dish place second egg and milk whisk, and brush over top of loaf, sprinkle the half a tsp. of parmesan and ground flax seed over top as well.
  8. Place in the oven on the middle rack and bake for 1hr. to 1hr and 15 minutes. You will know that the loaf is done when you can insert a skewer into the centre of the loaf and it comes out clean.
  9. Remove from oven allow to sit for 5 minutes the remove it from the pan and slice it to your desired thickness.

Notes
These are different egg wash options for the top crust of your bread. I like to have a deep rich brown crust, but not everyone is the same so I have provided different options for you to choose from: 1. Beaten Whole Egg: Shiny, dark colour. 2. Beaten Whole Egg with Milk: Medium-shiny color. 3. Beaten Whole Egg with Water: Lighter shiny color. 4. Beaten Egg Yolk: Shiny, deep lemon-yellow color. 5. Beaten Egg Yolk with Water: Shiny, lighter lemon-yellow color.
