- INGREDIENTS:
- • 10 eggs
- • 1 green onion chopped
- • 1 red & green pepper chopped
- • 3 sausage links sliced
- • 1 tsp. Italian seasoning
- • ¼ cup- 1/2 cup shredded Monterey Jake cheese
- • Salt and pepper to taste
I learned to make this from my mother when I was a little girl. Some recipes are just the best from a child hood memory. In time I have adjusted the recipe and made it my own with different interesting flavours, but it was momma’s original recipe that inspired this delicious sausage frittata to be apart of my best recipes. This recipe can be enjoyed as a breakfast, lunch or dinner, and it is gluten free for those of you who have an intolerance to gluten.
METHOD:
- In a bowl crack all 10 eggs and set aside, season with salt and pepper
- In a skillet cook onions on medium low heat for 2 minutes, add pepper and saute for another 2-3 minutes
- Add sliced sausage and continue cooking till browned about 7-10 minutes
- Take the bowl with eggs and whisk all together add to pan as soon as the egg starts to set take a fork or spatula and break the bottom to allow the uncooked egg to fall through and cook, do this till all of the egg mixture is cooked
- Once egg is cooked remove from heat and sprinkle the top with cheese
- Cut into slices like a pizza
- Serve hot with some toast for Breakfast or a tossed green salad for lunch or dinner
